Guest Post from Bare Feet on the Dashboard

I'm so excited to welcome Becca from Bare Feet on the Dashboard today! mmm...mmm...Oh! Sorry I was reading her post! YUM! Hey y'all! my name is Becca and I'm here from bare feet on the dashboard. today Jax and i are doing a little blog swap. thanks Jax! my blog is all about my life, and i love to share my faith, craft projects, recipes, and opinions. come by for a visit any time. i don't know what the weather is like where you live, but here in Dallas, it is HOT. I'm talking record highs. weather like this calls for a special summer recipe that is super easy. i studied abroad in Spain during college, and fell in love with gazpacho there. my host family didn't have air conditioning (like most families in Spain), so my host mother would fix gazpacho as a solution to cool us off. it is basically a chilled tomato and cucumber soup, and i hope you will love it as much as i do. here's what you need:
gazpacho:
1 cucumber, halved and seeded
2 red bell peppers, cored and seeded
4 plum tomatoes
1 onion
2 garlic cloves, minced
12 ounces tomato juice (3 cups)
1/4 cup white wine vinegar
1/4 cup olive oil
1/2 tbsp kosher salt
1/2 tsp black pepperprocess all of the veggies in your food processor.
add all of the other ingredients.
pour it into a bowl, stir, and chill.this recipe serves 8.
it is pretty light, and tastes amazing.
i like to enjoy it with a fresh baguette.
